The Zebitz Vikings share the recipe for:
Bacon, onion and sage stuffing
Line a pot with strips of bacon.
Cut more strips of bacon, dice the onion and rip up sage leaves. Mix together in a bowl. Add eggs, butter and oats and stir until well combined. The mixture should be sticky. Add a little water if necessary.
Put the mixture into the bacon lined pot and press down. Cover the top with more bacon. Place in the embers for around 1 hour. Don't let it get too hot or it will dry out and burn.
Mixed green cabbage like kale and pointed cabbage, shredded
Broad beans or peas
Spring onions, cut into small pieces
Crumbly cheese like white salad cheese (feta)
Mix the vegetables together and arrange on serving dish. Sprinkle with crumbled cheese.
Optional: Serve with a pesto made of your favourite herbs.
Serve the stuffing and salad with broiled or grilled chicken.
