Breakfast porridge with apple and honey

There's nothing quite like delicious porridge on a cold morning. It gets you warm and fills you up. You can use whatever grain you like best, add fruit, berries, nuts, and if you add milk, you will end up with a creamy result.

This breakfast porridge has a topping of apple, dried cranberries, toasted hazelnuts and sweet honey.

Recipe for 4 people.

8-10 cups water
1 cup milk (optional)
2 cups whole barley (the modern option would be pearl barley)
1 cup rolled oats. preferably extra thick
1 heaped teaspoon salt

Topping:
2 fresh and tart apples
1 handful dried cranberries
3 handfuls toasted hazelnuts
Honey

Add water, barley, oats and salt to a pot and bring it to the boil over an open fire (or on the cooker). Leave it to boil gently for about 45 minutes, stirring occasionally. When the barley and oats are tender, you can add a cup of milk for a creamy consistency.

While the porridge is cooking, dice the apples and toast and chop the hazelnuts.

Serve the porridge with a topping of apple, nuts, cranberries and honey.
