Apple and pork skewer

Æbleflæsk (Apple-pork) is a traditional Danish dish usually eaten at Christmas. The Vikings may not have known our Æbleflæsk, but apples, onions and pork were definitely all at hand.

What's more, Æbleflæsk actually tastes good all year round, so why not have a go at this variation of the dish cooked on the grill

Procedure

Secure two pieces of apple, two pieces of onion and two slices of pork on each skewer.
Place the skewers on the grill or cook them over a fire at indirect heat for 15-20 min.
Turn the skewers frequently and brush with melted herb butter.

A herb butter made of:
Melted butter
Chopped thyme
Chopped summer savory

Ingredients

2 persons
  • 4 tangy apples, cut into halves
  • 4 onions, cut into halves
  • 8 slices smoked pork belly
  • 4 skewers
  • Salt

Replace summer savory with modern rosemary.

Cook the skewers with pork, apple and onion at indirect heat
