Root vegetable patties

Some left-over root vegetable mash can easily be turned into the most delicious patties the next day!

For these patties, Frida has used a coarse mash made from turnips, carrots, parsnips, parsley root and celery root. You can add potatoes to your mash if you like. The potato, however, was not available to the Vikings and for that reason we leave it out here.

Procedure

Mix the vegetable mash with garlic, thyme, top of a parsley root (or just parsley), egg, flour and salt. The mixture should be quite firm. Season to taste.

Melt a knob of butter in a frying pan. Place spoonfuls of the mixture in the pan and cook the patties until golden and crisp on both sides.

These root vegetable patties can be served both hot, warm or cold.
