Mashed broad beans with garlic

From archaeological excavations we know that the Vikings were familiar with broad beans and grey peas. Along with turnips, cabbage and grain, they formed an essential part of the Vikings’ daily diet.

Mashed broad beans with garlic

This delicious mash of broad beans tastes wonderful with flatbread or as a side dish with your meal. Remember, you can season it with your favourite herbs.

Procedure

Mash the beans with the back of a spoon, in a mortar or a blender. Add the garlic and salt to taste. Adjust with a little water if you prefer a looser mash.

  • 250 g warm, cooked broad beans
  • 1 clove garlic, crushed
  • 1 tsp salt

Cook's notes

Serve the bean mash as a dip or spread it on a slice of good bread. Broad beans can be replaced with white beans or chickpeas, and in the modern kitchen the mash can also be refined with a little oil.
