Bread dumplings

A tasty and hearty soup is a great choice on a cold and windy autumn day. Frida has already made a vegetable soup and wants to serve it with bread dumplings. They are easily made of mainly stale, dry, white bread.

Procedure

Tear the bread into small pieces. Do not use the crust. Combine the bread with butter, thyme, salt and egg. Mix it really well and leave to rest for 5 min.

Add a little flour to the mixture and stir well. The mixture should be rather firm and sticky, and yet you should be able to roll it into small balls.

Put some flour on your hands and form balls of about 2 cm in diameter. Place them on a floured plate.

Drop the dumplings into the very hot soup one by one. They must not boil, but will cook in the hot soup within 2 min. and expand a little in size.

Serve the soup with the dumplings right away

  • Ca. 250 g stale white bread
  • 50 g melted butter
  • 1 tsp dried thyme
  • 1 tsp salt
  • 2 eggs
  • About 4 tbsp wheat flour
  • 1000 ml hot, ready-to-eat soup
