Flatbread with bacon, onion and cheese

"Leve" is the old Danish word for flatbread. This may explain our expression "Levebrød" today, meaning a staple bread eaten daily.

How about a snack? Imagine the scent and taste of a flatbread topped with fresh cheese, crisp fried smoked bacon, soft onions and a green sprinkle of thyme. Let’s get started!

Procedure

Bake the flatbreads and prepare the fresh cheese.

Fry the slices of bacon on both sides in a pan. Season with thyme. Place the slices on a plate and set aside.

Fry the onions in the bacon fat. Season with thyme and salt. The onions should cook until they take on colour and turn soft.

Serving: Start with a warm flatbread and spread fresh cheese on it. Add a slice of bacon, then soft onions and a sprinkle of thyme.
