We know for a fact that the Vikings enjoyed mead, just not every day. Honey wine was a luxury drink reserved for special occasions. Exotic spices like ginger, cinnamon, allspice and cloves became common in DK during the Middle Ages and were incorporated in both foods and medicine. That was the beginning of hot and spiced wine or spirits.
