Planked salmon

Outdoor cooking is made easy with this method as you won't need any other heavy equipment. You just need a fire, a plank and some wooden nails. Never use pine for your plank, though. The resin will ruin your fish/meat.

For this recipe we use salmon, wild garlic and spring onion, but you can easily change the ingredients with other types of fish, meat and herbs. Flatfish with fresh thyme, mackarel with summer savory and seaweed salt, and chicken with marjoram are three examples.

Procedure

Start a campfire. Soak the plank in water and it will not catch fire so easily during the cooking process.

Place the salmon on the plank, skin-side down. Season with salt, onion and herbs. Secure the fish to the plank with wooden pegs and string.

Place the plank about 30-40 cm away from the fire and let it cook using indirect heat. Turn the plank frequently.

Melt the butter and add onion and herbs. Drizzle the salmon during cooking with the butter.

The salmon should be cooked in about 20-30 min., have golden crispy edges and a juicy centre.

  • Ramsons, finely chopped
  • Spring onion, finely chopped
  • 100 g butter
  • 1 plank (not pine) with min. two holes
  • Wooden pegs
