Ember-roasted turnips

Here's a tip if you are looking for a different side dish. Roast some unpeeled turnips or other hard vegetables like celeriac in the coals of the bonfire or barbecue grill. It's simple, rustic and adds a sweet-smoky flavour to the vegetables.

Procedure

Cook the turnips in the embers of a fire. Turn them frequently to allow them to cook on all sides.

The turnips will go black on the outside, but then again you are only supposed to eat the inside. The cooking time depends on the size of the turnips and can be 45-90 min. Use a knife to check if they are tender.

Cut open the turnips, season with salt and perhaps herbs. Serve with butter.

  • 4 medium sized turnips
  • Salt
  • Herbs like e.g. thyme
  • Butter

You can also cook celeriac or other hard vegetables in the embers of a campfire or garden grill. Great with meat dishes.
