Onion soup with sage

Warm soup is the way to get through a cold or rainy day. And perfect after playing or working in the garden or a walk in the woods. It's so great to get together around a bonfire and cook a pot of delicious soup. It takes just one pot to make a soup and you can prepare the ingredients in advance in your kitchen. Keep it simple and celebrate the time together with the people you love. Now that is HYGGE!

Procedure

Melt a knob of butter in a heavy bottom cooking pot, add sage and thyme. Let it cook a few seconds before adding all the types of onion to the pot. Cook at low to medium heat for about 30 min. until the onions are soft and golden. Stir frequently. Perhaps add a little more butter to prevent the onions from sticking to the bottom. When the onions are golden, add the stock (beef, chicken or vegetable)
and let the soup simmer 15-20 min.

Season to taste and serve hot.

  • A bunch of spring onions, finely sliced
  • 2-3 leeks, finely sliced
  • 4 onion, finely chopped
  • 2-3 cloves garlic, finely chopped
  • A handful sage leaves, chopped
  • A handful thyme sprigs, chopped
  • Salt
  • About 1500 ml stock
  • Butter
