Elderflower pancakes

This is a recipe for a delicious dessert hardly anyone can refuse (about 8 cakes). Pick your elderflowers in the morning as the dew keeps the aroma well. Don't wash them, but give them a shake to remove any dirt.

Procedure

Mix the two types of flour and salt in a bowl. Add the milk whilst stirring, then the eggs and whisk well. The consistency of the batter should be like a runny porridge.

Give the clusters a good shake to remove any dirt. Melt a good knob of butter in a frying pan. Carefully dip the clusters in the batter and bake them in the pan. Flip them over when golden to cook the other side, too.

Serve the elderflower pancakes with honey and e.g. fresh berries.

  • 2 eggs
  • 180 g wheat flour
  • 180 g wholemeal flour
  • 0,5 tsp salt
  • 8 elderflower clusters
  • Butter
  • Honey
