Fruit marinated in mead

Even though mead is an ancient drink, it is often associated with the Vikings. To them mead was a valued delight, a nectar of the gods, made from honey which was a rather precious natural product.

Mead is a sweet, fermented drink. Apart from honey, it is brewed with water and spices. Mead is not a type of beer, but can be compared to sherry or port. Mead is an excellent dessert wine and welcome drink. You can use it in drinks, cocktails, for marinades and dressings, just as the nectar goes well with cheese, tapas, coffee etc.

This is a delicious dessert in itself, perhaps served with whipped cream... or vanilla icecream for a more contemporary dessert. Mead marinated fruit is also very good in a warm pancake or on top of your favourite porridge.

Procedure

Cut the fruit into bite-sized pieces and place in a bowl. Dissolve some honey in the mead and pour over the fruit. Cover the bowl.

Leave the fruit to marinate a little before carefully turning the fruit with a spoon. Do not squash the fruit. You want all the fruit to take flavour from the mead.

Let it marinate at least 1 hour somewhere cool (not the fridge) before serving.
