Elderflower pancakes
Here you have a recipe for a delicious dessert or sweet snack, about eight in total, made with elderflower, which both you and your children will love. Pick the elderflower heads in the morning, when the dew holds the flowers’ fragrance. Do not wash them. Simply shake off any dirt or small insects.
Procedure
Mix the two types of flour and the salt in a bowl. Gradually add the milk, stirring as you go, then add the eggs and whisk well. The batter should have the consistency of thin porridge.Gently shake the elderflower heads to remove any remaining dirt. Melt a generous knob of butter in a frying pan. Dip the elderflower heads thoroughly into the batter and fry them in the pan. When they are golden, turn them over and cook them on the other side.
Serve your elderflower pancakes with honey and, for example, fresh berries.

4 persons- 500 ml milk
- 2 eggs
- 180 g wheat flour
- 180 g wholemeal flour
- 0,5 tsp salt
- 8 elderflower clusters
- Butter
- Honey
