Pan-baked bread

You do not necessarily need an oven to make delicious bread. Here's the recipe for a good bread baked in a frying pan over hot coals. The taste and texture may remind you of a focaccia bread, and it's great both as an accompaniment and to serve for breakfast after a night sleeping under the stars.

Procedure

Rinse and chop the herbs, e.g. thyme, marjoram, ramsons and/or caraway.

Dissolve the yeast in the water. Add flour, herbs, salt and mix well. The dough should be a little sticky. Leave to rest somewhere warm for about 1 hour.

Create a bed of embers. Place a frying pan with butter over the embers. Both bottom and sides must be well greased.

When the butter has stopped bubbling, carefully spread out the dough in the frying pan. Make sure the fire isn’t too hot or the bread will burn before it is cooked.

Bake the bread 15 min. Flip it over and bake for another 15 min. You can add a little extra butter to the pan when you bake the other side.

After about 30 min., the bread is cooked. It should sound hollow when you tap it. Leave it to cool before serving

  • 25 g fresh yeast
  • 240 g wholemeal flour
  • 300 g wheat flour
  • 1,5 tsp salt
  • 1 handful herbs
  • 50 g butter
